Ultimate Comfort Mac n’ Cheese! Only 4 ingredients. Boil any noodle in chicken broth, drain but save a cup or so for flavor. Add in 1-2 cups of shredded cheese- I love cheddar, a splash or 3 of heavy cream and stir. Voila!

🥬 Whenever I visit Sissy in UT she takes me to @cubbys for their Kale and wild rice salad. Healthy, filling and packed with flavor. I’ve been craving it lately and decided to try @lillieeatsandtells dressing recipe. It’s spot on 👏🏼 Even my kids loved it! Omit anything you don’t love, it will still taste delicious. 😉 make extra and take some to a friend. Also @symlmusic strikes again with another great 🎶

Salad ingredients:
Kale washed (remove stems)
Chop thin
Wild rice
Green apple cubed
Craisins
Sliced almonds
Chicken
Goat cheese optional
Mix in dressing and toss.
Top with cubed avocado chunks & squeeze of fresh lime.

Dressing:
1 cup cilantro
½ cup low fat cottage cheese (or
Greek yogurt)
¼ cup balsamic vinegar
1 Tbsp. dijon mustard
½ Tbsp. olive oil
1 Tbsp. lemon juice
¼ tsp cumin
¼ tsp salt
